Veggie Fajitas (HC)

Ingredients

  • 1 teaspoons olive oil

  • 1 small onion

  • 1 medium red pepper

  • 5 mushrooms

  • 80g courgette

  • ½ teaspoon paprika

  • 75g black beans, canned

  • ½ teaspoon cumin seeds

  • ½ teaspoon garlic powder

  • 1 wholewheat tortilla wrap

  • 2 tablespoons sour cream

  • 80g (1 bowl) spinach leaves

Instructions:

  1. In a frying pan add a little olive oil.

  2. Slice the onions, peppers, mushrooms,courgettes and allow to saute for 5 minutes. Add in paprika powder, black beans, cumin and garlic (add any other mexican type seasoning).

  3. Dry fry a wrap on a frying pan for 2 minutes on each side, check so it doesn’t burn. Take wrap, spread sour cream on it, add spinach and top with vegetables.

  4. Can serve with any salad or vegetables.
