Tuna and Spinach Pasta (HC)

Ingredients

  • 60g (1 cup)(2 oz) wholegrain penne/pasta

  • 1 tsp olive oil

  • ½ clove garlic, minced

  • ¼ onion, chopped

  • ¼ red pepper (bell pepper), chopped

  • ¼ can plum tomatoes

  • ½ tsp herbs de Provence

  • Large can tuna in water, 80g (2¾ oz) approx

  • Bowl of fresh spinach

  • Salt and black pepper to taste

Instructions:

  1. Cook the pasta according to instructions on the packaging.

  2. Heat the oil in a large pan over medium-high heat. Add in the garlic and onion, and cook for 2-3 mins, until softened.

  3. Next, add in the chopped pepper (bell pepper), plum tomatoes and herbs de Provence.

  4. Using a wooden spoon, break up the tomatoes into pieces and cook for 5 mins.

  5. Add in a splash of water if necessary, to avoid burning, and season with salt and black pepper.

  6. Once pasta is cooked, add it to the pan and combine.

  7. Next, add in the spinach and cook for another 2-3 mins until wilted.

  8. Finally, add in the tuna, mix well to combine and take off the heat.

  9. Serve with freshly ground black pepper.
