Leek and Cheese Frittata and Salad (LC)

Ingredients

  • 1 tbsp olive oil (0.75 Aus tbsp -15ml)  

  • ¼ leek, mostly white, chopped 

  • 2 eggs  

  • Black pepper 

  • 30g (¼ cup, grated)(1 oz) cheddar cheese  

  • Side salad ingredients

Instructions:

  1. Add the olive oil to a frying pan along with  the sliced leek and sauté for a few minutes. 

  2. In a bowl add the eggs and black pepper. Beat the eggs, then add in the cheese and cooked leek. Mix well. 

  3. Pour the egg mixture into the pan ensuring all ingredients are evenly spread out. 

  4. Stir gently once or twice, then cook over a low heat for 8-10 mins until almost set. 

  5. Heat the grill to high. Transfer to under the grill for 3-5 mins until set on top. 

  6. Make simple side salad and serve with the frittata.
