Veggie Chow Mein (MC)

Ingredients

  • 40g (½ cup)(1½ oz) egg noodles

  • 125g (½ cup)(4½ oz) tofu (or any vegetarian alternative or meat)

  • 1 tsp sesame oil

  • ½ clove garlic, minced

  • 1 tsp ginger, grated

  • ½ leek, sliced (mostly white parts)

  • ½ red pepper (bell pepper), sliced

  • 2 mushrooms, sliced

  • A pinch of ground white pepper

  • A pinch of sugar

  • 1½ tbsp (22ml) soy sauce mixed with 1 tbsp water (0.75 Aus tbsp -15ml)

  • 1 spring onion (scallion, green onion) chopped

Instructions:

  1. Prepare the noodles according to instructions on the packaging.

  2. Cut the tofu into chunks.

  3. Heat the sesame oil in a wok or large frying pan. Add the garlic and ginger and fry for about a minute, add the tofu and cook for another 2 minutes. Next add the leek, pepper (bell pepper) and mushrooms and fry for about 5 minutes.

  4. Finally, add the cooked noodles, season with white pepper and a pinch of sugar. Pour in the soy sauce and water, then stir and fry for another 2 minutes.

  5. To serve, divide onto serving dishes and garnish with chopped spring onion.
