Veggie Chow Mein (MC)
Ingredients
40g (½ cup)(1½ oz) egg noodles
125g (½ cup)(4½ oz) tofu (or any vegetarian alternative or meat)
1 tsp sesame oil
½ clove garlic, minced
1 tsp ginger, grated
½ leek, sliced (mostly white parts)
½ red pepper (bell pepper), sliced
2 mushrooms, sliced
A pinch of ground white pepper
A pinch of sugar
1½ tbsp (22ml) soy sauce mixed with 1 tbsp water (0.75 Aus tbsp -15ml)
1 spring onion (scallion, green onion) chopped
Instructions:
Prepare the noodles according to instructions on the packaging.
Cut the tofu into chunks.
Heat the sesame oil in a wok or large frying pan. Add the garlic and ginger and fry for about a minute, add the tofu and cook for another 2 minutes. Next add the leek, pepper (bell pepper) and mushrooms and fry for about 5 minutes.
Finally, add the cooked noodles, season with white pepper and a pinch of sugar. Pour in the soy sauce and water, then stir and fry for another 2 minutes.
To serve, divide onto serving dishes and garnish with chopped spring onion.
