Pepper Couscous with Grilled Halloumi (HC)

Ingredients

  • 40g (¼ cup) (1½ oz) giant couscous, wholewheat

  • 70g (2½ oz) (2 ½ oz) halloumi

  • 1 tsp olive oil

  • 1 tomato

  • ½ green pepper (bell pepper)

  • ½ red pepper (bell pepper)

  • ½ tsp paprika

  • ½ tsp oregano

  • Black pepper

  • 3 spears broccoli

  • Juice from half a lemon

  • 1 tbsp (0.75 Aus tbsp – 15ml) hummus

Instructions:

  1. Prepare the giant couscous according to the instructions on the pack.

  2. Slice the halloumi and pop under the grill, grill for about 2-3 minutes each side. Keep checking though as it can easily burn.

  3. In a pan add some olive oil, sliced tomato and peppers (bell peppers).

  4. Allow to sauté for a few minutes then add in paprika, oregano and black pepper.

  5. Add in broccoli and allow to cook on a medium heat for around 10 minutes, stirring often.

  6. When the couscous is cooked, drain off any excess water if needed and add to the vegetables.

  7. Squeeze over some lemon juice, taste test and add more seasoning if you need to.

  8. Add halloumi to bowl, spoon on couscous mixture and serve with hummus.
