Broccoli, Potato and Cheese Frittata (MC)

Ingredients

  • 70g potatoes 

  • 3 spears of broccoli 

  • 1 tsp of olive oil 

  • ½ onion 

  • 2 eggs 

  • 30g Cheddar cheese 

  • Side salad (of your own choice)

Instructions:

  1. Heat the grill to high.

  2. Put the potatoes in a pan of cold water and bring to the boil.

  3. Once boiling, cook for 4-5 mins or until nearly tender, then add the broccoli for a final minute.

  4. Meanwhile, heat the oil in an ovenproof frying pan and add the onion.

  5. Cook for a few minutes until softened.

  6. Mix the eggs with half the cheese in a jug and season well.

  7. Pour over the onion in the pan, then scatter over the broccoli and potatoes.

  8. Top with the remaining cheese and put under the grill for 5 mins or until golden and cooked through.

  9. Serve with side salad.
