Salmon Salad (LC)
Ingredients
1 small tin salmon, in brine, 80g (2¾ oz)
1 tsp parsley
Black pepper
¼ cucumber
½ red peppers (bell peppers)
½ red onion
½ avocado
Squeeze lemon juice
Drizzle of extra-virgin olive oil, optional
Small bowl of rocket
Instructions:
Drain the tinned salmon and place in a bowl.
Season with parsley and black pepper and mix well.
Chop the cucumber, pepper (bell pepper), onion and cube the avocado.
Combine everything together and mix well.
Serve on a bed of rocket with a squeeze of lemon juice and a drizzle of extra-virgin olive oil (optional).
