One Pan Eggs (LC)

Ingredients

  • 1 tsp olive oil

  • ½ pepper (bell pepper), sliced

  • 4 mushrooms, sliced

  • 80g (½ cup)(3 oz) courgette (zucchini), sliced

  • Black pepper for seasoning

  • 2 eggs

  • ½ avocado

Instructions:

  1. In a frying pan add some olive oil, peppers (bell peppers), mushrooms and courgette (zucchini).

  2. Allow to sauté for a few minutes, season with black pepper.

  3. Once the vegetables are cooked, make two spaces in the middle of the pan and crack open the two eggs into these spaces.

  4. Cover the pan with a lid until the eggs are ready. Serve with avocado.
