Old Fashioned Veg Soup (LC)

Ingredients

  • 1 tsp olive oil

  • ½ onion

  • ½ stock cube, low sodium, vegetable

  • 200ml (¾ cup) (7 fl oz) boiling water, adjust for your desired consistency

  • 150g (1 cup) (5⅓ oz) mixed veg of your choice, peeled and diced (carrots, parsnip, celery, turnip (rutabaga))

  • Black pepper

Instructions:

  1. Heat the oil in a large pot, add the onion and cook until softened.

  2. Dissolve the stock cube in the boiling water.

  3. Add the vegetable to the pot and pour over the stock, mix well.

  4. Cover with a lid and simmer over a medium heat for approx. 10 minutes or until the vegetables are completely soft.

  5. Remove from heat and allow to cool slightly.

  6. Blitz with a hand-blender or you can also leave chunky if you wish.

  7. Season with black pepper.

Top Tip

Can serve with a side portion of protein of your choice.
