Roasted Chickpeas
Ingredients
200g chickpeas, drained and rinsed
½ tsp olive oil
1 tsp smoked paprika
1 tsp ground cumin
1 tsp ground coriander
Instructions:
Heat the oven to 180-degrees fan and line a baking tray with baking paper.
Tip the chickpeas on to a piece of kitchen roll and pat dry.
Add the chickpeas to a bowl and toss with the olive oil, paprika, cumin and coriander. Mix gently until the chickpeas are fully coated.
Place the coated chickpeas onto the prepared baking tray and bake for 35 minutes, moving them round the tray halfway through so they dry out evenly and are crunchy.
Leave to cool before serving.
Top Tip
The recipe makes 4 portions. The chickpeas can be stored in an airtight container for a few days.
