Indian Cauliflower and Chickpea Bake (HC)

Ingredients

  • 5 cauliflower florets

  • 4 tbsp chickpeas (garbanzo beans) (3 Aus tbsp -60ml)

  • ½ red pepper (bell pepper)

  • ½ red onion

  • 1 tsp garam masala

  • Black pepper for seasoning

  • 1 tsp olive oil

  • 6 cherry tomatoes

  • Side salad

  • 1 tbsp hummus or tzatziki (0.75 Aus tbsp -15ml)

Instructions:

  1. Preheat oven at 180 degrees Celsius (350 degrees Fahrenheit/Gas Mark 4).

  2. Slice vegetables (minus tomatoes) and place into a bowl.

  3. Add the garam masala, black pepper and olive oil.

  4. Mix around.

  5. Pop some baking paper on a baking tray and place vegetables on it.

  6. Roast for 20-30 minutes (half way through cooking, mix and add the tomatoes)

  7. When veggies are ready, serve with side salad and hummus or tzatziki.
