Indian Cauliflower and Chickpea Bake (HC)
Ingredients
5 cauliflower florets
4 tbsp chickpeas (garbanzo beans) (3 Aus tbsp -60ml)
½ red pepper (bell pepper)
½ red onion
1 tsp garam masala
Black pepper for seasoning
1 tsp olive oil
6 cherry tomatoes
Side salad
1 tbsp hummus or tzatziki (0.75 Aus tbsp -15ml)
Instructions:
Preheat oven at 180 degrees Celsius (350 degrees Fahrenheit/Gas Mark 4).
Slice vegetables (minus tomatoes) and place into a bowl.
Add the garam masala, black pepper and olive oil.
Mix around.
Pop some baking paper on a baking tray and place vegetables on it.
Roast for 20-30 minutes (half way through cooking, mix and add the tomatoes)
When veggies are ready, serve with side salad and hummus or tzatziki.
