Open-Faced Egg, Tomato and Salad Sandwich (MC)

Ingredients

  • 1 slice of brown wholemeal bread

  • 2 eggs

  • 1 tsp full-fat mayonnaise (or salad cream)

  • A handful of mixed salad leaves

  • 1 tomato, sliced

  • Sprinkle of black pepper to taste

Instructions:

  1. Toast the bread to your liking.

  2. Fry the eggs in a dry frying pan to your liking.

  3. To serve, spread the mayonnaise (or salad cream) on the toast and top with the salad leaves, eggs and tomato. Sprinkle with black pepper and enjoy!
