Mushroom, Broccoli, Ham and Cheddar Frittata (LC)

Ingredients

  • 1 tsp olive oil

  • 1 large onion, chopped

  • 75g mushrooms, sliced

  • 75g broccoli, cut into small florets

  • 4 eggs, beaten

  • Black pepper to taste

  • 1 tsp of dijon mustard

  • 1 tbsp of fresh parsley, chopped

  • 50g cheddar cheese, grated

  • 75g ham, chopped

  • Side salad or vegetables to serve

Instructions:

  1. Put the oil into a frying pan and over a medium heat. Add the onion and cook for 4-5 minutes until soft.

  2. Add the mushrooms and broccoli and cook for a further 4-5 minutes until tender.

  3. In a bowl, beat the eggs, season with black pepper and stir in the mustard and the parsley.

  4. Stir in the cheese and ham and add to the pan.

  5. Pour over the eggs, stir gently, then cook over a low heat for 8-10 minutes until almost set.

  6. Preheat the grill on high.

  7. Transfer the frittata in the pan to the grill for 3-5 minutes until the top is set.

  8. Serve half with a large salad or vegetables.
