Microwave Oat Mug Cake
Ingredients
1 tsp coconut oil, softened
1 egg, beaten
3 tbsp milk (of your choice)
1 tsp maple syrup/honey
½ tsp vanilla essence
40g oats
½ tsp baking powder
¼ tsp cinnamon
1 tsp dark chocolate chips
1 tbsp full-fat Greek yoghurt, to serve
Instructions:
Grease a medium sized microwave safe mug with a small amount of coconut oil.
Add coconut oil, egg, milk, maple syrup and vanilla essence to a mixing bowl and whisk until smooth.
Stir in the oats, baking powder, cinnamon and chocolate chips.
Pour cake batter into the mug.
Microwave on full power for 45 seconds then gently stir.
Place back into the microwave for 45 seconds, remove and leave to stand for 1 minute before serving.
Avoid overcooking for the best results.
Serve with some Greek yoghurt and enjoy.
