Apple Bread

Ingredients

  • 40g ( ½ cup) (1½ oz) porridge oats

  • 115g (1 cup) (4 oz) self raising flour

  • 2 tbsp (1.5 Aus tbsp – 30ml) flaxseed (can use ground or regular or half and half)

  • 115g (⅔ cup) (4 oz) sultanas

  • ½ tsp baking powder (baking soda)

  • 2 tsp mixed spice / all spice

  • 2 small apples, peeled and grated

  • 2 eggs

  • 2 tbsp (1.5 Aus tbsp – 30ml) honey

  • Sprinkle of pumpkin seeds to garnish

Instructions:

  1. Preheat the oven to 180°C / 356°F / Gas Mark 4. Line a 1lb loaf tin with non-stick paper.

  2. Put the oats in a bowl with the flour, flaxseed, sultanas, baking powder (baking soda) and spice and mix well.

  3. Add the grated apples to the oat/flour mix with the eggs and honey and mix thoroughly.

  4. Spoon the mixture into the prepared loaf tin and sprinkle with pumpkin seeds.

  5. Bake for 45-55 minutes or until a skewer inserted into the centre comes out clean.

  6. Leave for 5 minutes to cool before turning out. Wait until completely cooled before cutting into portions.

Top Tip

Tip for cutting even portions, turn the loaf over or to the side to cut evenly, portions will cut cleaner when the loaf is fully cool.

 

Snacks

 

Serves: 12 finger width slices, one finger width slice is a portion/large snack
