Green Fritters And Poached Egg (LC)

Ingredients

  • 100g courgettes, grated

  • 4 eggs

  • 50g broccoli florets, finely chopped or grated

  • small handful fresh parsley, roughly chopped

  • 1 tbsp plain flour

  • Black pepper to taste

  • 1 tbsp olive oil

Instructions:

  1. Squeeze the courgettes between your hands to remove any excess moisture, or tip onto a clean tea towel and twist it to squeeze out the moisture.

  2. Beat two of the eggs in a bowl, add the courgettes, broccoli, and most of the parsley (save some for garnish), and mix together. Add the flour, mix again and season with black pepper.

  3. Heat the oil in a non-stick frying pan. Spoon a quarter of the mixture into the pan, leave for 3-4 minutes on a medium heat until golden brown on one side and solid enough for you to flip over, then flip over and leave to go golden on the other side. Repeat with the remaining mixture until you have four fritters.

  4. To serve, poach the remaining two eggs to your liking. Place two fritters on a plate and top with a poached egg and a sprinkle of chopped parsley.
