Cranberry and Oatmeal Energy Balls

Ingredients

  • 90g porridge / oats

  • 30g flaked almonds

  • 1 tsp chia seeds

  • 125g smooth peanut or almond butter

  • 75g honey

  • 65g dried cranberries

Instructions:

  1. In a large bowl combine the oats, almonds and chia seeds.

  2. Add the peanut butter, honey, and cranberries into the bowl. Stir until well combined.

  3. Using a regular spoon, scoop out enough mix to make a one inch ball. Using your hands, roll the ingredients around until you have formed the 1 inch ball. If your mixture is too dry, add a teaspoon of water.

  4. Continue scooping out ingredients and rolling 1 inch balls until you have used up all of the mix. You should be able to create 12 balls.

Top Tip

The recipe makes 12 portions. The bites can be stored in an airtight container for a few days or in the freezer. 1 big ball would be a snack or 2 small.
