Thai Style Pork Mince Salad (LC)

Ingredients

  • 1 tsp sesame oil

  • ½ onion, finely diced

  • ½ tsp garlic powder

  • ½ tsp ginger (fresh of powder)

  • 125g pork mince (or any mince desired)

  • Black pepper to taste

  • 80g white cabbage, finely sliced

  • 1 small carrot, grated

  • Handful of spinach

  • Handful of basil (fresh or dried)

  • Handful of coriander (fresh or dried)

  • Sprinkle of chilli flakes (optional)

Dressing:

  • 2 tbsp soy sauce, low sodium

  • 1 tsp sweet chilli sauce (or honey)

  • 1 tsp lime juice

  • Black pepper to taste

Instructions:

  1. Heat the sesame oil in a wok on medium heat.

  2. Add in the onion, garlic, ginger and pork mince then sauté until cooked.

  3. Season with black pepper.

  4. While the pork mince is cooking, add the white cabbage, carrot, spinach, basil and coriander to a serving bowl.

  5. To make the dressing, mix the soy sauce, sweet chilli sauce (or honey) and lime juice in a small bowl. Taste test and season with black pepper to taste.

  6. Top the salad with minced pork mixture.

  7. Drizzle over the dressing, top with chilli flakes (optional) and enjoy.
