Coronation Chicken Salad (LC)

Ingredients

  • 1 heaped tsp mayonnaise

  • 1 heaped tbsp (0.75 Aus tbsp - 15ml) full-fat Greek yoghurt

  • 1 heaped tbsp (0.75 Aus tbsp - 15ml) mango chutney

  • ½ tsp curry powder

  • 1 tsp soy sauce

  • Black pepper for seasoning

  • 1 cooked chicken breast, sliced

  • ½ red onion, thinly sliced (optional)

  • 1 handful of mixed salad leaves

  • 3 cherry tomatoes, quartered

  • ½ pepper (bell pepper) (any colour), thinly sliced

  • 25g (⅙ cup)(⅘ oz) cucumber, diced into bite-sized pieces

  • 1 heaped tbsp flaked almonds

Instructions:

  1. In a bowl add the mayonnaise, greek yoghurt, mango chutney, curry powder, black pepper, soy sauce and drop of water.

  2. Mix around, taste test and add more black pepper to season if you like.

  3. Add the sliced chicken and red onion (this is optional and not essential) to the bowl and mix around

  4. To serve, arrange the mixed leaves, tomatoes, peppers and cucumber on a plate, spoon on the chicken mixture and top with flaked almonds.

  5. Can eat right away or can store chicken mixture in the fridge until best before date.
