Salmon, Pea and Lemon Frittata (LC)

Ingredients

  • 1 tsp olive oil

  • 1 large onion, chopped

  • 4 eggs, beaten

  • Juice from half a lemon

  • 1 tsp of dijon mustard

  • 1 tbsp of fresh parsley, chopped

  • 100g peas, fresh or frozen

  • 2 salmon fillets skinless

  • 50g feta cheese

  • Side salad or vegetables to serve

Instructions:

  1. Put the oil into a frying pan and over a medium heat cook the onion until soft.

  2. In a bowl, beat the eggs, season and stir in the lemon juice, mustard and the parsley.

  3. Stir the peas into the onions, cut the salmon into bite sized chunks and add to

  4. the pan.

  5. Pour over the eggs, stir gently, then cook over a low heat for 8-10 minutes until

  6. almost set and the fish is cooked through.

  7. Preheat the grill to high.

  8. Crumble the feta and add to the frittata.

  9. Transfer the frittata in the pan to the grill for 3-5 minutes until the top is set.

  10. Serve half with a large salad or vegetables.

Recipe Adjustments

Want to make recipe vegetarian? Remove the salmon, this recipe already has a protein element from the eggs however you can add some additional vegetables or increase the amount of peas.

The recipe makes 2 portions, save the second portion for lunch the following day.
