Stacked Falafel Burgers

INGREDIENTS
125g chickpeas, drained
½ red onion, diced
1 garlic clove, crushed
1 tsp ground cumin
1 tsp chilli flakes
1 tbsp plain flour
2 tbsp fresh parsley
2 tbsp red pepper hummus
2 brioche buns, sliced
2 slices of mature cheddar
½ avocado
½ lime
2 slices of tomato
Handful of rocket
2 tsp olive oil
Salt and pepper
INSTRUCTIONS
Add chickpeas, onion, garlic, cumin, chilli, flour, parsley and a pinch of salt and pepper to a food processor and pulse until combined.
Mould mixture into two burger shaped patties.
Heat a frying pan with olive oil.
Place falafel burgers into the pan and fry for 3-4 minutes on each side.
Whilst cooking, mash avocado with the juice of ½ a lime and season to taste.
Spread hummus on the bottom of each brioche bun then top with burger, cheese, salad, tomato and avocado.
