Egg Mayo Salad

Lunch, Dinner

Serves: 2

Ingredients:

  • Egg Mayo

    • 4 eggs, hard boiled

    • 40g full-fat Greek yoghurt

    • 2 tsp full-fat mayonnaise

    • 1 tsp Dijon mustard

    • ¼ tsp lemon zest

    • ½ tbsp fresh parsley, finely chopped

    • 1 celery stick, diced

    • Freshly ground black pepper

    Salad

    • 1 bowl of shredded lettuce

    • ¼ cucumber, diced

    • 4 cherry tomatoes, quartered

    • ¼ red onion, sliced

Instructions:

  1. Add hard boiled eggs to a bowl and mash with a fork or potato masher to break up.

  2. Top with Greek yoghurt, mayonnaise, mustard, lemon zest, parsley, diced celery and black pepper.

  3. Mix well to make the egg mayo.

  4. Add all salad ingredients to a serving dish and mix well.

  5. Top with egg mayo and enjoy.
