Banoffee Overnight Oats

Ingredients:

  • Oats:

    • 40g porridge oats

    • 100ml semi-skimmed milk

    • 50g full-fat Greek yoghurt

    • ½ banana

    • 1 tsp dark chocolate chips

     Caramel:

    • 1 Medjool date

    • 10g almond butter

    • 1 tsp vanilla extract

    • 1 tsp honey

    • 2-4 tsp water

Instructions:

  1. Mix oats, milk and yoghurt in a bowl and refrigerate overnight.

  2. Make the caramel by blitzing all ingredients in a blender, adding water as and when needed to help blend.

  3. Top tip – make a batch of 3-4 portions of the caramel for easy blending and easy food prep.

  4. Once the oats are set overnight layer with banana, caramel and dark chocolate chips to make the banoffee overnight oats.

  5. Store for 2-3 days in the fridge, make in batches for an easy food prep.
