Popcorn Chicken Salad

Ingredients:
Popcorn Chicken:
1 medium chicken breast, diced
1 tsp paprika
1 tsp garlic granules
Freshly ground black pepper
2 tbsp wholewheat flour
1 egg, beaten
3-4 tbsp panko breadcrumbs
Salad:1 bowl of shredded lettuce
½ red pepper, sliced
¼ cucumber, diced
4 cherry tomatoes, halved
¼ red onion, sliced
Sauce:2 tbsp full-fat Greek yoghurt
¼ tsp garlic granules
¼ tsp onion granules
½ tsp chives, finely diced
¼ tsp lemon juice
½ tsp semi-skimmed milk
Instructions:
Preheat the oven to 200c / 180c fan.
Add diced chicken to a bowl. Season well with paprika, garlic granules and black pepper. Mix well.
Prepare three separate dishes with flour, beaten egg and panko breadcrumbs ready to coat the chicken.
Dip each piece of chicken, one at a time, in flour (dusting off any excess) then egg and then panko breadcrumbs. Repeat until all of the chicken is coated.
Place on a lined baking tray and bake for 20-25 minutes in the oven, flipping halfway.
Alternatively, grease the air fryer basket with 1 tsp olive oil and lay chicken pieces in a single layer in the tray. Work in batches if you need to.
Air fry at 200c for 10 minutes, flipping halfway.
Whilst the popcorn chicken bakes, whisk together the ingredients for the sauce and place in the fridge until ready to serve.
Add all salad ingredients to a serving dish and mix well.
Top with popcorn chicken and drizzle over the creamy sauce.
