One Tray Cheesy Tomato and Gnocchi Bake
Ingredients:
1 tbsp olive oil
1 red onion, chopped
½ courgette, cut into chunks
1 pepper, sliced
280g broccoli, cut into small florets
1 low sodium stock cube
1 tsp mixed herbs
1 tsp garlic powder
1 tsp paprika
2 tbsp Worcestershire sauce
400g tomato passata
Black pepper for seasoning
250g fresh gnocchi
60g cheese, grated
Instructions:
Preheat your oven to 220°C/200°C fan/gas mark 7.
Heat the olive oil in a large frying pan over medium heat. Add the onion, courgette, peppers and broccoli, cooking for 5 minutes until they begin to soften.
Crush the stock cube into the vegetables, add the mixed herbs, garlic, paprika, Worcestershire sauce, passata and season with black pepper. Simmer gently for 3-4 minutes, stirring to combine.
Add the gnocchi to the vegetables and tomato sauce, and mix around. Taste test and add more seasoning if required.
Add the mixture into an ovenproof dish and top with cheese.
Transfer the dish to the oven and bake for 20 minutes until the cheese is melted and golden.
Remove from the oven. Serve hot and enjoy!
Recipe Tip: Could add sausages or any type of additional protein to the recipe.
