Chilli Veggie Nachos
Ingredients:
1 tsp olive oil
½ red onion, peeled and finely chopped
½ clove garlic, peeled and crushed
75g Quorn mince
1 ½ tsp tomato puree
½ tsp ground cumin
½ tsp ground cinnamon
100g tinned chopped tomatoes
1 corn tortilla
30g cheddar cheese, grated
½ red chilli, sliced
1 tbsp sour cream
10g fresh coriander, finely chopped
Portion of salad or vegetables of your choice
Instructions:
Preheat the oven to 180c.
Heat the oil in a frying pan, add the onion and garlic and fry for a couple of minutes.
Add the Quorn mince and fry until browned.
Add the tomato puree and spices and fry for a minute, then pour in the chopped tomatoes and a splash of water.
Bring to a simmer then cook gently for 15-20 minutes.
Meanwhile cut the tortilla into triangles, arrange on a baking tray in a single layer then bake for 10 minutes or until crisp.
In a serving bowl, layer the tortilla chips with the chilli mixture then top with the cheese, chilli, sour cream, and coriander.
Serve with salad or vegetables.
