Chilli Veggie Nachos

Ingredients:

  • 1 tsp olive oil

  • ½ red onion, peeled and finely chopped

  • ½ clove garlic, peeled and crushed

  • 75g Quorn mince

  • 1 ½ tsp tomato puree

  • ½ tsp ground cumin

  • ½ tsp ground cinnamon

  • 100g tinned chopped tomatoes

  • 1 corn tortilla

  • 30g  cheddar cheese, grated

  • ½ red chilli, sliced

  • 1 tbsp sour cream

  • 10g fresh coriander, finely chopped

  • Portion of salad or vegetables of your choice

Instructions:

  1. Preheat the oven to 180c.

  2. Heat the oil in a frying pan, add the onion and garlic and fry for a couple of minutes.  

  3. Add the Quorn mince and fry until browned.  

  4. Add the tomato puree and spices and fry for a minute, then pour in the chopped tomatoes and a splash of water.  

  5. Bring to a simmer then cook gently for 15-20 minutes.

  6. Meanwhile cut the tortilla into triangles, arrange on a baking tray in a single layer then bake for 10 minutes or until crisp.

  7. In a serving bowl, layer the tortilla chips with the chilli mixture then top with the cheese, chilli, sour cream, and coriander. 

  8. Serve with salad or vegetables.
