Blended Peach and Raspberry Pudding

Ingredients:

  • 75g fresh or tinned peach (in fruit juice), chopped

  • 1 tsp maple syrup (or honey)

  • 70ml milk (of your choice)

  • 75g full-fat Greek yoghurt

  • 1 ½ tbsp chia seeds

  • 10 fresh raspberries (or frozen, defrosted)

  • 10g almonds, chopped (optional, for topping)

Instructions:

  1. In a blender, combine the peach, maple syrup, milk, Greek yoghurt and chia seeds. Blend until smooth and creamy.

  2. Pour the blended mixture into a jar or container. Cover and refrigerate overnight to allow the chia seeds to thicken the pudding.

  3. In the morning, stir the pudding well. Top with the raspberries and chopped almonds.

    Note: Advance prep – Make the night before.
