Lentil and Sweet Potato Curry Soup
Ingredients:
1 tsp olive oil
1 small onion, diced
1 tsp of garlic powder
2 tbsp of curry powder
1 tsp of paprika
1 tsp of chilli
1 tsp grated ginger
1 tsp cumin
250-300g dried red lentils
1 large sweet potato, cut into cubes
400g tin tomatoes
400g tin coconut milk
2 cups of water
1 low sodium stock cube
2 tbsp of soy sauce
100g spinach, chopped
Instructions:
Heat the olive oil in a deep saucepan.
Add the onions, herbs and spices and cook for a few minutes.
Stir in the lentils, sweet potato, chopped tomatoes, coconut milk, water and stock cube.
Bring to a boil, then reduce to a simmer for 35-40 minutes.
Stir in soy sauce and taste. Adjust the seasoning with more spices if needed, and add more water if required.
Add the chopped spinach and cook for a further 5 minutes.
Once the spinach is cooked, serve and enjoy.
