Lentil and Sweet Potato Curry Soup

Ingredients:

  • 1 tsp olive oil

  • 1 small onion, diced

  • 1 tsp of garlic powder

  • 2 tbsp of curry powder

  • 1 tsp of paprika

  • 1 tsp of chilli

  • 1 tsp grated ginger

  • 1 tsp cumin

  • 250-300g dried red lentils

  • 1 large sweet potato, cut into cubes 

  • 400g tin tomatoes

  • 400g tin coconut milk

  • 2 cups of water

  • 1 low sodium stock cube

  • 2 tbsp of soy sauce

  • 100g spinach, chopped 

Instructions:

  1. Heat the olive oil in a deep saucepan.

  2. Add the onions, herbs and spices and cook for a few minutes.

  3. Stir in the lentils, sweet potato, chopped tomatoes, coconut milk, water and stock cube.

  4. Bring to a boil, then reduce to a simmer for 35-40 minutes. 

  5. Stir in soy sauce and taste. Adjust the seasoning with more spices if needed, and add more water if required.

  6. Add the chopped spinach and cook for a further 5 minutes.

  7. Once the spinach is cooked, serve and enjoy.
