Chocolate and Orange Truffle Cups

Ingredients:

  • 3 oz. (100g) dark chocolate, 70-80%

  • 2 tbsp peanut butter

  • ⅓ cup (80ml) milk of choice (plant-based or cow’s milk)

  • 1 tbsp honey

  • Zest of 1 orange

  • 2 tbsp fresh orange juice

  • 9 -10 silicone or paper cupcake liners

Instructions:

  1. Place the chocolate and peanut butter in a heatproof bowl and gently melt it in the microwave or over a double boiler until smooth.

  2. In a small pot, heat the milk, honey, orange zest, and orange juice until it begins to a gentle boil.

  3. Pour the hot milk mixture into the melted chocolate, stirring very gently and slowly until the mixture is silky and fully combined.

  4. Evenly distribute the chocolate mixture among 9 or 10 silicone or paper cupcake liners, using approximately 1 tablespoon per liner. 

  5. Place into the freezer for about 2 hours, or until the mixture is firm.

  6. Serve at room temperature and store any leftovers in the freezer.
