Spaghetti Bolognese/Veggie Mince (HC)
Ingredients
50g (1¾ oz) spaghetti, wholewheat
1 teaspoon olive oil
1 small onions
½ clove garlic
4 slices of red pepper (bell pepper)
4 mushrooms
130g (1 cup)(5 oz) turkey mince, 2% fat or 75g quorn mince
200g (1 cup)(7 oz) canned tomatoes
1 teaspoon tomato puree (tomato paste)
1 medium carrots
Sprinkle black pepper
1 teaspoon mixed herbs
30g (¼ cup, grated)(1 oz) cheddar cheese
Instructions:
Cook spaghetti per packet instructions.
In a frying pan add some olive oil, onions, garlic, peppers (bell peppers), mushrooms and mince.
Allow to sauté until the mince has browned (drain off any excess liquid if needed).
Then add in the tinned tomatoes, tomato puree (tomato paste) and carrots along with black pepper and mixed herbs.
Stir altogether and allow to simmer for 15 minutes.
Taste test before serving, add more seasoning if needed.
Serve with spaghetti with cheese on top.

Want to remove the meat? Replace Turkey Mince with 75g Quorn Mince.
