Chicken Shawarma Bowl (LC)

Ingredients

  • ½ red pepper, sliced

  • ½ green pepper, sliced

  • ½ red onion, sliced

  • 1 chicken fillet (approx. 125g), sliced into strips

  • ½ tbsp olive oil

  • ½ tsp cumin

  • ½ tsp oregano

  • ½ tsp ground coriander

  • ½ tsp paprika

  • ¼ tsp cinnamon

  • 1 tsp garlic powder

  • 140g broccoli, cut into florets

  • 2 tbsp full-fat Greek yoghurt

  • ½ tsp dill

  • Black pepper

  • ½ tsp lemon juice

  • ¼ cucumber, cut into cubes

  • 6 cherry tomatoes, halved

Instructions:

  1. Preheat the air fryer to 180°C.

  2. Add the red pepper, green pepper, red onion, chicken strips, olive oil, cumin, oregano, coriander, paprika, cinnamon and ½ tsp garlic powder to a bowl. Mix well until everything is seasoned.

  3. Add the chicken and vegetable mixture into the air fryer and cook them for 15 minutes (keep checking while cooking and mix in the air fryer).

  4. Boil the broccoli until tender but still crunchy.

  5. In a small bowl, mix the Greek yoghurt, dill and 1 tsp garlic powder. Season with black pepper and 1 tsp lemon juice and mix well.

  6. Once the chicken mixture is cooked, add everything to a bowl and add yoghurt on top.

Top Tip

 If unable to use an air fryer, sauté chicken and vegetables in a pan or oven bake.
