Shakshuka (LC)

Ingredients

  • 1 tsp olive oil

  • ½ onion

  • ½ green pepper (bell pepper), sliced 

  • 2 tomatoes, sliced

  • ½ tsp garlic powder

  • ¼ tsp ground coriander (cilantro)

  • ½ tsp paprika

  • ¼ cumin

  •  Black pepper

  • ½ tin chopped tomatoes

  • 2 eggs

  • Side salad of your choice

Instructions:

  1. In a frying pan add the olive oil, finely sliced onion, pepper (bell pepper) and fresh tomatoes.  

  2. After a few minutes add the garlic, coriander (cilantro), paprika, cumin and  black pepper.  

  3. Mix around and then add the chopped,  tinned tomatoes.  

  4. Cover and cook on a medium heat for around 10 minutes so this sauce reduces.

  5. Taste test and add more seasoning if you think it needs it. 

  6. Make two dents in the tomato sauce and crack an egg into each dent.  

  7. Cover the pan, cook on a low - medium heat until the eggs are cooked.  

  8. Serve with side salad or any type of vegetables.
