Roasted Veggie Salad and Hummus (MC)
Ingredients
½ bell pepper (bell pepper)
4 mushrooms
80g (1/3 cup)(2¾ oz) courgette (zucchini)
½ onion
6 cherry tomatoes
1 carrot
1 tsp of olive oil
1 tsp of mixed herbs
Black pepper for seasoning
30g (¼ cup)(1 oz) feta cheese
1 cup of spinach
1 tbsp of hummus (0.75 Aus tbsp -15ml)
Small side salad (of your own choice)
Instructions:
Preheat oven at 180 degrees Celsius (350 degrees Fahrenheit/Gas Mark 4).
Slice vegetables (except for spinach), then add to a bowl with olive oil and some seasoning.
Place onto a baking tray and bake for 20- 30 minutes.
When vegetables are ready, add feta, spinach and hummus.
