Roasted Veggie Salad and Hummus (MC)

Ingredients

  • ½ bell pepper (bell pepper)

  • 4 mushrooms

  • 80g (1/3 cup)(2¾ oz) courgette (zucchini)

  • ½ onion

  • 6 cherry tomatoes

  • 1 carrot

  • 1 tsp of olive oil

  • 1 tsp of mixed herbs

  • Black pepper for seasoning

  • 30g (¼ cup)(1 oz) feta cheese

  • 1 cup of spinach

  • 1 tbsp of hummus (0.75 Aus tbsp -15ml)

  • Small side salad (of your own choice)

Instructions:

  1. Preheat oven at 180 degrees Celsius (350 degrees Fahrenheit/Gas Mark 4).

  2. Slice vegetables (except for spinach), then add to a bowl with olive oil and some seasoning.

  3. Place onto a baking tray and bake for 20- 30 minutes.

  4. When vegetables are ready, add feta, spinach and hummus.
