Raspberry Trifle

Ingredients

  • 110g (⅔ cup)(3 ¾ fl oz) cottage cheese  

  • 75g (½ cup)(2 ½ oz) raspberries  

  • 1 tsp honey  

  • 2 tbsp muesli (granola) (no added sugar) (1.5  Aus tbsp -30ml)

Instructions:

  1. Place the cottage cheese, ⅔ of the  raspberries and honey into a high-speed  blender and blitz until smooth (you can also  use Greek yoghurt instead of cottage cheese but it will be thinner). 

  2. Keep the rest of the raspberries for garnish.  Layer the trifle into a glass. 

  3. Start with a layer of raspberry cheese, layer of muesli, and some fresh raspberries. 

  4. Continue until you use all of the ingredients.  Serve immediately or keep in the refrigerator  until required.
