Pesto Pasta (HC)
Ingredients
50g (¾ cup) (1¾ oz) wholewheat pasta
1 tsp olive oil
140g (2 cups) (5 oz) broccoli, cut into florets
½ green pepper (bell pepper), diced
3 tbsp (2.25 Aus tbsp – 45ml) frozen peas
1 tbsp (0.75 Aus tbsp – 15ml) green pesto
5 cubes feta cheese, cubed
1 cup rocket leaves
Instructions:
Cook pasta as per instructions on the pack.
In a frying pan add some olive oil, broccoli and pepper (bell pepper). Allow to sauté for 10 minutes.
Boil the peas for a few minutes. When ready, add to the frying pan.
When the pasta is ready, drain and add to the frying pan with the vegetables and peas.
Now add in the pesto and feta plus some rocket. Mix together and serve.
Top Tip
Can add a side of protein/meat if you wish.
