Noodle Soup (MC)

Ingredients

  • 450ml (1¾ cups) (15 fl oz) water

  • ½ stock cube, low sodium, vegetable

  • 1 carrot

  • ½ tsp ground ginger

  • ½ clove garlic, crushed

  • 30g (½ cup) (1 oz) soba noodles

  • 1 spring onion (scallions, green onions), chopped

  • 1 tbsp (0.75 Aus tbsp – 15ml) soy sauce, reduced sodium

Instructions:

  1. Pour the water, stock cube into a pot and add the sliced carrot, ginger and garlic.

  2. Bring to the boil, then reduce the heat, partly cover and simmer for 20 minutes, until the vegetables are tender.

  3. Add the noodles, spring onion and the soy sauce to the stock and water.
