Oaty Baked Pear Chia-Pudding

Ingredients

  • 1 pear

  • 3 walnuts

  • Dash of cinnamon, to taste

  • 1/2 teaspoon of honey

  • 1 tablespoon of oats

  • 125g (1/2 cup Greek Yoghurt)

  • 1 teaspoon chia seeds

Instructions:

  1. Preheat oven to 180°C/350°F/Gas Mark 4.

  2. Slice the pear into chunks and crush the walnuts (or loosely chop).

  3. Place pear and walnuts into a bowl, add the cinnamon, honey and oats.

  4. Mix around to ensure all the flavours are combined.

  5. Place the contents of the bowl into a baking dish and pop into the oven for around 15 minutes (keep checking, some ovens may need a little longer. The goal is a soft consistency but it will be quite a sticky and thick mixture).

  6. In the meantime add the Greek yoghurt into a jar or bowl.

  7. Mix in the chia seeds.

  8. When the pear mixture is ready, allow to cool.

  9. Then add the pear mixture to the yoghurt, mix around.

  10. Let it set in the fridge overnight.
