Honey Chilli Noodles (HC)

Ingredients

  • 50g whole-wheat noodles 

  • 1 teaspoon of olive oil 

  • ½ garlic clove 

  • ½ red bell pepper 

  • ½ tsp of ginger 

  • 4 baby corn 

  • 10 sugar snap peas 

  • 2 tablespoon of soy sauce

  • 1 teaspoon of honey 

  • 1 teaspoon of chilli sauce 

  • 1 egg 

  • 20g or 1 bowl of spinach 

  • 1 teaspoon of sesame seeds (optional)

Instructions:

  1. Begin by boiling the noodles according to the instructions on the packet.

  2. In a frying pan add the olive oil, garlic,pepper and ginger.

  3. Sauté for a few minutes while stirring it. 

  4. Add the baby corn and sugar snap peas, mix around.

  5. Cook for 5 minutes on a medium heat.

  6. Add the cooked noodles into the pan. 

  7. Add in the soy sauce, honey and chilli. Mix around. Taste test and add a little more flavour if required.

  8. Prepare either a soft boiled or fried egg. 

  9. Add in the spinach and mix it around until it's wilted.

  10. Plate noodles and add egg on top.

  11. Top with a sprinkling of sesame seeds.
