Crispy Chicken Burger (HC)

Ingredients

  • 1 medium sized chicken fillet

  • 1 egg, beaten

  • 3-4 tbsp (2.25-3 Aus tbsp – 45-60ml) oat flour (ground porridge oats)

  • 2 tsp smoked paprika

  • Sprinkle of black pepper

  • 1 wholemeal bread roll, sliced

  • 1 lettuce leaf

  • 1 tomato, sliced

  • 2 slices of red onion

  • Side salad or green vegetables of your choice

Spicy Yoghurt Sauce:

  • 1 tbsp (0.75 Aus tbsp – 15ml) full-fat Greek yoghurt

  • 1 tsp full-fat mayonnaise

  • 1 tsp sriracha chilli sauce

Instructions:

  1. Preheat the oven to 190°C / 194°F / Gas Mark 7 and prepare a lined baking tray. 

  2. Lie the chicken fillet on a chopping board and cover with cling film.

  3. Bash down with a rolling pin to flatten the chicken breast slightly.

  4. Place the egg and flour in two separate dishes.

  5. Mix the oat flour with smoked paprika. 

  6. Season the chicken breast on both sides with a sprinkle of black pepper. 

  7. Cover the chicken in the flour mixture and dust off.

  8. Then dip in to the egg mixture and back into the flour mixture again dusting off once done. 

  9. Place onto the prepared baking tray and into the oven for 15-20 minutes or until cooked through.

  10. Whilst the chicken is cooking, mix together the ingredients for the spicy yoghurt sauce in a small bowl.

  11. Heat a griddle pan to hot and place sliced bread roll face down onto the heat to toast.

  12. Smother the roll with sauce and stack with chicken, lettuce, tomato and red onion.

  13. Serve with a fresh salad or steamed green vegetables of your choice.
