Vegetable Omelette
Ingredients
2 eggs
Black pepper
1 tsp olive oil
4 mushrooms
¼ courgette (zucchini)
½ pepper (bell pepper)
30g cheese, grated (⅕ cup) (1 oz)
1 tbsp (0.75 Aus tbsp – 15ml) hummus (optional)
Instructions:
In a bowl add the eggs and black pepper.
Beat the eggs and then add chopped vegetables.
Turn on the grill to heat up.
Heat some olive oil in a non-stick pan.
Then add the egg mixture.
Allow to cook for 5 minutes or so.
Top with cheese.
When almost ready then pop until the grill to finish off for a few minutes.
Serve with hummus on the side.
Top Tip
Use any veg you have leftover in the fridge.
