Chicken Coleslaw Salad (LC)

Ingredients

  • 1 chicken fillet

  • Black pepper for seasoning

  • Pinch of salt

  • 1 sm bowl of rocket

  • 50g cucumber

  • ¼ red pepper

  • 5 cherry tomatoes

  • ½ sm red onion

  • 2 tbsp full fat coleslaw, or make your own

Instructions:

  1. You can poach the chicken fillet so it's easy to shred or you can also buy a roasted chicken and use a breast from it for convenience

  2. For poaching, add the chicken fillet to a pan of water, season the water with some black pepper and a pinch of salt if necessary and bring to the boil

  3. Then allow chicken to simmer for around 10 minutes (chicken may need a little longer if it’s a bigger fillet)

  4. Remove fillet from water and checked it’s cooked thoroughly, then shred with a fork

  5. Set aside to cool

  6. In a salad bowl add the rocket

  7. Then finely slice the cucumber, red pepper, tomatoes and onion

  8. Add to the salad bowl

  9. Once the chicken has cooled, add to the bowl along with the coleslaw

  10. Mix, taste test, add more seasoning if needed and then serve
