Chicken Alfredo (HC)

Ingredients

  • 60g (½ cup) (2 oz) wholewheat spaghetti

  • 1 tsp olive oil 

  • 1 chicken fillet

  • 1 tsp unsalted butter

  • 4 tbsp (3 Aus tbsp – 60ml) cream

  • ½ tsp nutmeg 

  • 1 tbsp (0.75 Aus tbsp – 15ml) parmesan cheese

  • Black pepper 

  • Large bowl garden salad

Instructions:

  1. Cook spaghetti according to the instructions on the pack.

  2. Heat the olive oil in a pan. Add the sliced chicken fillet and fry for around 10 minutes.

  3. Place chicken into a bowl and set aside for a few minutes.

  4. Add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.

  5. Once the spaghetti is cooked, add to the frying pan with the cream mixture.

  6. Add in the parmesan, season with black pepper and then taste test. Add any other seasoning if needed. Can add an additional bit of water if needed before serving.

  7. Serve with side salad.
