Broccoli, Pea and Ham Soup (MC)
Ingredients
2 tsp olive oil
1 small onion, diced
1 clove garlic, crushed
6 spears broccoli
6 tbsp frozen peas
2 medium potatoes (approx. 80g), sliced or cubed
400ml water
1 stock cube, low sodium
1 tsp dill
1 tsp basil, chopped
100g ham, chopped
Instructions:
Heat the oil in a pan.
Add the onion and fry for 8 minutes until soft.
Add the garlic and cook for a further 1 minute.
Add the broccoli, peas, and potato, then add water and crush in the stock cube. Bring to the boil.
Reduce the heat to a simmer, cover and cook for 25 minutes.
Stir through the herbs, then blitz the soup with a blender until completely smooth.
Stir in ½ (50g) of the chopped ham and serve.
Top Tip
The recipe makes 2 portions, save the second portion for lunch tomorrow or pop in the freezer for another time.
