Breakfast Wraps
Ingredients
1 medium egg
Black pepper
1 tsp olive oil
2 mushrooms, sliced
1 lean slice of bacon, diced
4 cherry tomatoes, quartered
4 slices of red pepper
1 pork sausage, cooked and sliced
3 tbsp baked beans
15g cheddar cheese, grated
Instructions:
Whisk the egg and season with black pepper. Set aside.
Heat ½ tsp of olive oil in a frying pan over medium heat, add the mushrooms, diced bacon, cherry tomatoes and peppers and saute for 4-5 minutes.
Stir in the cooked sliced sausage and beans and continue to sauté until the bacon is cooked. Set aside.
Heat ½ tsp of olive oil in a clean frying pan over a low heat. Add in the beaten egg. Turn the heat up to high and cook until the top of the egg has set. Flip the egg wrap over and cook the other side. The wrap will be very thin so it should only take a couple of minutes to cook.
To serve, remove the wrap from the pan and put on a plate, then spread the filing on one half. Sprinkle with cheese, then roll or fold the wrap.
