INGREDIENTS

  • 2 salmon fillets, 110g each

  • 300g new potatoes, halved

  • 2 tsp mixed herbs

  • 2 garlic cloves, crushed

  • 2 slices of lemon

  • 1 tbsp fresh parsley, finely chopped

  • Salt and pepper

  • 2 tsp olive oil

 

INSTRUCTIONS

  1. Preheat oven to 200c.

  2. Mix together 1 tsp olive oil with potatoes, mixed herbs, salt and pepper.

  3.  Place evenly onto a lined baking dish and put the straight into the oven for 10 minutes.

  4.   Mix together crushed garlic and fresh parsley with 1 tsp of olive oil and rub into the salmon.

  5. Take the baking tray out of the oven and add salmon to the tray.

  6. Top salmon with lemon slices.

  7. Place into the oven for 5 minutes.

  8. Take out of the oven and add green beans, season with salt and pepper.

  9.  Place back into the oven for 10 minutes.

  10. Top with fresh parsley and a squeeze of lemon.
