Crushed Cucumber Salad With Salmon

Serves: 2

Ingredients:

  • For the salad:

    • 1 red bell pepper, chopped

    • 1 cucumber, crushed, chopped

    • 1 garlic clove, sliced

    • fresh coriander, chopped

    • 6 oz. (180g) hot smoked salmon fillets

    • black pepper to taste

    For the dressing:

    • 1 lime, juiced

    • 1 tbsp. fish sauce

    • 1 tbsp. rice wine vinegar

    • 1 tbsp. sesame oil

    • 1 tbsp. black sesame seeds

Instructions:

  1. Roughly chop the red pepper and place in a bowl.

  2. Using a meat mallet or rolling pin smash the cucumber, then slice into bite-size pieces and transfer into the bowl.

  3. Add the sliced garlic and chopped coriander.Mix all dressing ingredients and drizzle over the cucumber.

  4. Mix well and divide between 2 plates.To serve, break the salmon up into pieces and place on top of the cucumber salad — season with freshly ground black pepper.

Note:
Use as much or as little coriander as you like.
