Moroccan Chicken Drumsticks

Ingredients:
2 tbsp. olive oil
8 chicken drumsticks
1 onion, halved, sliced
2 cloves garlic, crushed
½ cup (15g) parsley, chopped
2.5 oz. (70g) green olives,
¼ lemon, juice only
1 tsp. flour
1 tsp. turmeric
pinch saffron
1 tbsp. Paprika
½ tsp. ground cumin
salt and pepper to taste
Instructions:
Heat the oil in a large pan, and fry the chicken drumsticks on all sides until golden.
Add the onion and garlic. Season with salt and pepper and cook for another 3-4 mins.
Pour in 1 cup (240ml) of boiling water and add the spices. Mix well and bring to the boil.
Add half of the chopped parsley and mix. Cover the pan with a lid, reduce the heat and simmer for 30 minutes, making sure to turn the meat over half-way through the cooking time.
Finally, add the green olives and lemon juice, and mix well.
Mix the flour with 2 tbsp. of water, and then with 2 tbsp. of the sauce from the pan. Pour this mixture into the pan and mix well.
Cook uncovered for another 10-15 mins until the sauce thickens and the meat is tender.
Sprinkle with the remaining chopped parsley and serve.
