Moroccan Chicken Drumsticks

Serves: 4

Ingredients:

  • 2 tbsp. olive oil

  • 8 chicken drumsticks

  • 1 onion, halved, sliced

  • 2 cloves garlic, crushed

  • ½ cup (15g) parsley, chopped

  • 2.5 oz. (70g) green olives,

  • ¼ lemon, juice only

  • 1 tsp. flour

  • 1 tsp. turmeric

  • pinch saffron

  • 1 tbsp. Paprika

  • ½ tsp. ground cumin

  • salt and pepper to taste

Instructions:

  1. Heat the oil in a large pan, and fry the chicken drumsticks on all sides until golden.

  2. Add the onion and garlic. Season with salt and pepper and cook for another 3-4 mins.

  3. Pour in 1 cup (240ml) of boiling water and add the spices. Mix well and bring to the boil.

  4. Add half of the chopped parsley and mix.  Cover the pan with a lid, reduce the heat and simmer for 30 minutes, making sure to turn the meat over half-way through the cooking time.

  5. Finally, add the green olives and lemon juice, and mix well.

  6. Mix the flour with 2 tbsp. of water, and then with 2 tbsp. of the sauce from the pan. Pour this mixture into the pan and mix well.

  7. Cook uncovered for another 10-15 mins until the sauce thickens and the meat is tender.

  8. Sprinkle with the remaining chopped parsley and serve.


    Serving suggestion:

    Bulgur, potatoes, brown rice, tomato salad
