Cottage Cheese Oat Bread 

Ingredients:

  • 200g porridge oats (half ground into flour for a lighter texture)

  • 1 tbsp flax seeds

  • 1 tbsp chia seeds

  • 25g pumpkin seeds

  • 25g sunflower seeds

  • 1 tsp baking powder

  • 1 tsp dried oregano (optional, for added flavour)

  • Touch salt

  • 2 large eggs

  • 300g cottage cheese

Instructions:

  1. Preheat the oven to 180°C (160°C fan) or Gas Mark 4. Blend half the oats into a fine flour using a blender or food processor.

  2. In a large bowl, combine the rolled oats, oat flour, flax seeds, chia seeds, pumpkin seeds, sunflower seeds, baking powder, oregano and salt.

  3. In a separate bowl, whisk the eggs and cottage cheese until smooth.

  4. Add the wet ingredients to the dry mixture and stir until well combined. Let the mixture sit for 5 minutes to thicken slightly.

  5. Line a loaf tin (8 x 4 inches) with baking parchment or grease it lightly. Pour the mixture into the tin and smooth the top.

  6. Bake in the preheated oven for 35–40 minutes, or until the top is golden and a skewer inserted into the centre comes out clean.

  7. Allow the loaf to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

  8. 1 or 2 slices could be served as breakfast with your choice of toppings. 1 slice could also be enjoyed as a snack.
