Gut Loving Green Bowl 

Ingredients:

  • 1 or 2 eggs

  • 1 tsp olive oil

  • 75g kale, washed and shredded

  • ½ spring onion, sliced

  • 3 tbsp frozen peas

  • Pinch of black pepper

  • ½ tsp mixed herbs

  • 70g halloumi, sliced

  • ¼ large / ½ small avocado, sliced

  • 2 tbsp fermented vegetables (e.g., kimchi, sauerkraut, or pickled cabbage)

  • A sprinkle of sesame seeds (optional)

Instructions:

  1. Fill a small saucepan with boiling water, add the eggs and cook for 7-8 minutes, or until cooked to your liking. Once done, remove from the water and let cool. Once cooled, peel, cut in half and set aside.

  2. Heat a non-stick frying pan over medium heat. Add ½ tsp of the olive oil, followed by the shredded kale, spring onions and peas. Sauté for 7-8 minutes, or until the kale is softened. 

  3. Season with black pepper, and mixed herbs (and add any other seasoning if necessary), then transfer to a serving bowl.

  4. Return the pan to the heat and add the remaining olive oil. Fry the sliced halloumi for 2-3 minutes on each side until golden and crispy.

  5. To serve, add the halloumi, avocado and fermented vegetables to the bowl with the kale, spring onions and peas. Add the eggs, then sprinkle with sesame seeds to garnish.

  6. Serve and enjoy!
