Mackerel Pate Snack Plate 

Ingredients:

Mackerel Pate:

  • 1 peppered smoked mackerel fillet (skin removed)

  • Juice and zest of ¼ small lemon

  • 1 tsp cream cheese

  • ½ tsp dill

  • ¼ tsp mustard

Snack Plate:

  • 1-2 vacuum packed beetroot

  • ¼ cucumber, sliced into sticks

  • ½ carrot, sliced into sticks

  • ½ red pepper, sliced into sticks

  • Handful of mixed salad leaves

  • Any other vegetables or salad

Instructions:

  1. In a food processor, blend the mackerel fillets, lemon juice, lemon zest, cream cheese, dill, and mustard until smooth. 

  2. It's easy to make without a food processor, use a fork to break the smoked mackerel fillets into small pieces. Add the additional ingredients and mix around.

  3. Taste and adjust seasoning as needed.

  4. Add all the vegetables and additional salad ingredients to a plate and enjoy.
